I'm beginning to analyze stroop data and am wondering what the difference is between the average latency and corrected average latency scores that Inquisit outputs?

First you should specify the exact task / script you are referring to (there are many Stroop scripts). Secondly, I'm sure you'll find your questions answered in the relevant literature the respective task is based on (as referenced on the script's download page as well as in the comments inside the script).
