I need to know if the participants IP-addresses are recorded anywhere in an internet survey?

A client machine's *local* IP address can be recorded to the data file by using the computer.ipaddress property (details in the documentation; please note that it's an indexed property). Be aware that that may not reflect a client's *public* IP. The latter will be reflecting in the participant tracking logs (if participant tracking was activated), accessible via https://www.millisecond.com/myaccount/reporting/rptscripts.aspx

Can I deactivate participant tracking? So that the IP adress will not show in the participant tracking logs. Or can I do anything elso so that the IP adress isn't recorded?

Yes, you can deactivate participant tracking by checking the respective checkbox when uploading / configuring your experiment via the Web Script Wizard (1st step, bottom, "Disable web participant logging: [ ]").
